I used to be terrified of making bread, but it really is super easy – and there isn’t anything better then fresh baked bread with some butter.  Hmmm…

This is my foolproof ‘dough’ recipe.  You can roll it out to make breadsticks, bagels, buns, pizza dough – you name it!  Its that versatile.

Start off with about 1 and 1/3 to 1/4 cup of warm water.  (temp should be between 105-115 F).

bread 1

Add in 2 1/4 teaspoon of the yeast to the water and stir.

bread 2

Let it sit for about 3-5 minutes until it looks something like this:

bread 3

If your yeast and water mixture doesn’t look any different, then it didn’t proof.  Your gonna have to do Steps 1-3 again.

Add to a large bowl the following: 3 1/2 cups of flour (white or whole wheat), 2 tbsp of olive oil, 1 tbsp of sugar and 3/4 tsp  of salt.

bread 4

Add the yeast mixture to the bowl.

bread 5

Stir with your hands until it sticks together.  (You can add a bit more flour if the mixture is too wet.)

bread 6

Dump mixture onto a lightly floured surface.

bread 7

Knead the dough for about 7-9 minutes until it is smooth and when pressed with your finger bounces back.

bread 8

lightly coat with olive oil.

bread 9

place into oiled bowl and cover with saran wrap or a tea towel. Place it somewhere warm and let rise for 1-2 hours.

bread 10

It has risen when it has doubled in size.

bread 11

Punch the dough down and roll into an oval shape.  Cover with a tea towel and let it rise again for another hour.

bread 12

After the second rise take a knife and cut slits in the top.  I like to sprinkle some herbs and salt.

bread 13

Bake in the oven at 375 for about 40-45 minutes.  Part way through I coat with olive oil or butter.

It is done when bread is dark and when tapped with a knife ‘sounds hollow’.
